  • 2 tbsp melted butter
  • 2 tbsp flour
  • 1/4 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 cup chopped pecans
  • 1/4 cup chicken stock

Step 1

blend together the butter,flour brown sugar, cinnamon, pecans. set aside. butter a 1 1/2 qt. baking diah. add chicken broth. slice 3 lbs of large peeled sweet potatoes into 1/2 inch rounds. cover bottom of casserole with slices. top with half a chopped scallion. repeat layers until ptaotes are used up. bake covered for about 1 hour. remove from oven. press down sweet potatoes top with crumb;le. caKE UNCOVERED 15 MINUTES. REST FOR 5 MINUTES. CUT INTO 8 SERVINGS
