Q: What are the red spots in egg yolks, and is it OK to eat them?

A: Relax. Those pesky specks are perfectly safe, reports the American Egg Board. They're found in less than 1 percent of all eggs laid, and are caused by the rupture of a blood vessel on the yolk surface during formation (not fertilization, as you might suspect). Reddish-brown spots are even less common, and are usually just blood spots that changed color due to a chemical reaction. Most of these blemishes are found on mass scans before eggs go to market, but some get through. Simply remove the fleck with the tip of a knife if you find it unappetizing.
