Broiled Salmon in three citrus sauce

Ingredients
- 4 4-oz salmon fillets
- juice of one small orange
- juice of one small lemon
- juice of one small lime
- 1 tsp grated lemon zest
- 1 tsp grated orange zest
- 1 tsp grated lime zest
- 1/2 small white onion minced
- 1/2 tsp honey
- 1 small jalapeno pepper, seeded, minced
- nonstick cooking spray
- 1 lime, peeled thinly sliced
- 4 sprigs watercress

Step 1
Arrange salmon fillets in a single layer in a small pan or dish. In a small bowl, combine citrus juices and zests, onion, honey and jalapeno. Pour mixture over salmon. Marinate, covered, in a refrigerator for 3 hours overnight. Preheat broiler and spray rack with nonstick cooking spray. Lift salmon fillets out of marinade, wipe off excess marinade and reserve it. Place fillets on broiler rack and broil approx 4 niches from heat for about 4-6 minutes on each side, turning once. When cooked, salmon should spring back when touched.When ready to serve, heat marinade until it begins to bubble. pour over salmon. garnish with lime slices and watercress.
