Ingredients
- 1 large bunch kale
- 3 tb olive oil
- zest and juice of 1 lemon
- 1/2 cup dried cranberries
- 1/2 cup chopped Parmesan
- 1/2 cup toasted pine nuts

Preparation
Step 1
cut and discard tough center out of each kale leaf. Stack and roll the leaves and chop finely Place in a large bowl,toss with remaining ingredients. Add coarse sea salt and pepper to taste
Let mellow in fridge for a couple of hours to soften kale and flavors develop.
