Ingredients

  • 1

    large bunch kale

  • 3

    tb olive oil

  • zest and juice of 1 lemon

  • 1/2

    cup dried cranberries

  • 1/2

    cup chopped Parmesan

  • 1/2

    cup toasted pine nuts

Directions

cut and discard tough center out of each kale leaf. Stack and roll the leaves and chop finely Place in a large bowl,toss with remaining ingredients. Add coarse sea salt and pepper to taste Let mellow in fridge for a couple of hours to soften kale and flavors develop.
