Ingredients

  • 6 tbsp butter/margarine softened
  • 6 tbsp granulated sugar
  • 2 large eggs
  • 1/4 tsp almond flavoring
  • 1 cup all purpose flour
  • 1/3 cups finely ground almonds
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup candied cherries, quartered
  • CHERRY ICING
  • 1 cup icing sugar
  • 1-1/2 tbsp butter/margarine softened
  • 4 tsp water
  • 1/4 tsp cherry or almond flavoring
  • drops of red food coloring

Preparation

Step 1

Craem butter and sugar in bowl. Beat in eggs, 1 at a time. Add almond flavoring. Mix.

Add remaining 5 ingredients. Stir until moistened. Spread in greased 8x8 inch pan. Bake in 350 oven for 20 to 25 minutes. An inserted wooden pick should come out clean. Cool.

Cherry Icing: Measure first 4 ingredients into bowl. Beat well, adding a bit more water or icing sugar to make a spreading consistency. Mix in a few drops of red food coloring to make a pretty pink color. Makes a generous 1/2 cup.
