Ingredients
- 1 large onion chopped
- 1 large leek chopped
- 1 large red bell pepper chopped
- 1 cup chopped mushrooms
- 2 cloves garlic
- 1 cup brown rice
- 3 cups vegetable stock
- 1/3 cup red wine or red wine vinegar
- 2 tbsp chopped parsley
- 1/2 tsp paprika
- 1/4 cup chopped cilantro
- salt and pepper
Preparation
Step 1
saute onion and leek until soft
add pepper, mushrooms and garlic
add rice, vegetable stock and red wine
bring to a boil
simmer until liquid is absorbed (15 min)
add herbs and spices
turn off heat and cover, let sit for 5 minutes
