Beer and Kraut Fudge Cake

Ingredients

  • 2/3 c. butter
  • 1 1/2 c. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 c. cocoa
  • 2 1/2 c. unsifted flour
  • 1 tsp. bak. soda
  • 1 tsp. bak. powder
  • 1/4 tsp. salt
  • 1 c. beer
  • 2/3 c. sauerkraut, rinsed, drained, chopped

Preparation

Step 1

cream butter and sugar till light and fluffy. Beat in eggs and vanilla. Sift together cocoa, flour, soda, bak. powder, and salt. Add dry ingredientst to the creamed mixture alternately with beer, starting and ending with the dry ingredients. Stir in chopped sauerkraut. Pour into greased and floured bundt pan or 2 (9") pans. Bake at 325 -350 for about 50 mins. Cool. Top with frosting if desired. (really good without it though!)
