Salmon: Fennel Roasted

I love this recipe because it's so easy, and the salmon isn't dry at all.

Ingredients

  • 3 lb salmon filet
  • 1 large whole onion sliced
  • l large whole fennel bulb sliced
  • fresh thyme
  • salt and pepper
  • 2 whole onions
  • 1 large bunch of fresh dill
  • 1 stick butter
  • 1/2 cup white wine

Preparation

Step 1

Preheat oven 400.

Saute onions and fennel on medium heat in olive oil and butter and thyme until golden and soft. Takes about 10 or 15 minutes. Put onion and fennel in a large 13 x 9 baking dish. Place fish over bed of onion, season with salt and pepper, then lather with butter, then sprinkle dill all over the fish, and then place lemons over the dill and butter. Drizzle white wine over lemons and bake in oven for about 20 to 25 minutes. Do not over bake.
