Best Ever Pasta Fagioli

"A traditional Italian soup. Serve with a crisp salad and a hot loaf of garlic bread and you have a meal! Serve with grated Parmesan cheese on top."

Ingredients

  • 1 clove fresh garlic
  • 2 (19 oz) cans of Cannellini beans (white beans)
  • 1 (15 oz) can tomato sauce
  • Seasonings to taste: salt, pepper, Italian seasoning
  • Meatballs (use your favorite recipe), browned
  • 1 pkg shell macaroni (cooked and drained)
  • Grated Parmesan cheese

Preparation

Step 1




Brown garlic in olive oil.

Mix 2 cans beans with one can of water in electric blender until almost smooth.

Add blended beans to browned garlic then add the can of tomato sauce and one can of water to the pan.

Add remaining ingredients (except pasta), bring to a slow boil. Let simmer for 25 minutes stirring occasionally. Add pasta before serving. Yields: 4 servings
