Ingredients

  • 1

    tb butter

  • ½

    cup chopped onion

  • 2

    cups chopped roasted skinless bonelss chicken breast

  • 1

    10oz box frozen mixed vegetables, thawed

  • cups water

  • 1

    Tb all purpose flour

  • 1

    14oz can chicken broth

  • ¼

    tsp salt

  • ¼

    tsp black pepper

  • 1

    bay leaf

  • 8

    flour tortillas cut into½ inch strips

  • 1

    tb chopped fresh parsley

Directions

Melt butter in a large saucepan over med high heat. add onion, saute 5 min or until tender. Stir in chicken and veg cook 3 min or until thoroughly heated, stirring constantly. While chicken mixture cooks, combine water flour and broth. Gradually stir broth mixture into chicken mixture. Stir in salt, pepper and bay leaf, bring to a boil. Reduce heat, and simmer 3 min. Stir in tortilla strips and cook 2 min or until tortilla strips softenb. Remove from heat, stir in parsley. Discard bay leaf.
