Ingredients

  • 4 T veg oil
  • 2.5 lb chorizo or smoked sausage
  • 4 C. onions
  • 1 1/2 C chopped bell peppers
  • 1 1/2 C celery
  • cayenne to taste
  • 14 1/2 can tomatoes
  • 4 small cans tomato paste
  • 2 T chopped garlic
  • 5 C water
  • 8 bay leaves
  • 1/2 tsp thyme
  • 3 lbs peeled shrimp
  • creole seasoning
  • 1 tsp black pepper
  • 1 1/2 tsp salt
  • 1/4 C sugar
  • 2 tsp worcestershire sauce

Preparation

Step 1

Heat oil in pan add sausage and cook 2 min. Add onions, celery, and peppers and cook 6-8 min.
Add other ingredients except for shrimp and cook over medium heat for 20 min.
Add shrimp and cook for additional 20 min.
Serve over rice
