Marie Callenders potato cheese soup

Ingredients

  • 8 C peeled and cubed potatoes
  • 2 C peeled and chopped onion
  • 4 C chopped celery
  • 2 tsp. salt
  • 4 C half & half
  • 6 T butter
  • C shredded sharp cheddar cheese
  • 4 T chopped fresh parsley

Preparation

Step 1

Place potatoes, onionsm celery, and salt in water to cover in large pot. Simmer until tender, about 15 minutes.

Put in blender or food processor, and puree until chunky. Return to soup pot, add half & half, butter and cheese.

Stirring, simmer until piping hot. Do not boil. Garnish with parsley.
