Ingredients

    lb salmon fillet

  • 1

    tbs Mexican Seasoning Blend (below)

  • 1

    c. shredded cabbage

  • 1

    diced avocado

  • 1/2

    c. diced tomatoes

  • 1/2

    c. chopped cilantro

  • Seasoning Blend:

  • 1/4

    c. chili powder

  • 1

    tbs oregano

  • 1

    tbs cumin

  • 1/2

    tsp garlic powder

  • Store in airtight container.

  • For tacos: 2 1/2 tbs per pound of beef

  • As a rub: 1 tbs per pound

Directions

Rub fish with seasoning blend. Roast 8 minutes or just until cooked through. While fish cooks, toss cabbage, avocado, tomatoes, and cilantro together. Mix up dressing and stir in cabbage mixture. Break salmon into pieces. Fill 8 warmed corn or flour tortillas with salmon and vegetables. Top with cheese and sour cream if desired.
