Ingredients
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 1 tea. cumin
- 1 tea. cinnamon
- 1 tea. sugr
- 1/2 tea. salt
- 1/2 tea. pepper
- 8 chicken thighs (or breasts?)
- 1 Tbsp. oil
- 1 cup chopped green onions
- 4 cups corn kernels (about 6 ears)
- 1 large tomato, chopped
- 1 red bell pepper, chopped
Preparation
Step 1
Preheat oven to 375 degrees.
Combine the first 7 ingredients. Rub on chicken.
Heat oil in skillet. Add chicken and cook until browned, about 5 minutes per side. Transfer to a plate.
Combine onions, corn, tomato and bell pepper in a 9x13 baking dish. Place chicken on top of corn mixture. Cover and bake 15 minutes. Uncover and bake 15 minutes more.
