Ingredients
- 1 Cup onions finely chopped
- 1 Cup celery finely diced
- 2 Cups diced potatoes
- 2 Cans minced clams and juice (6 1/2 oz each)
- 3/4 Cup butter
- 3/4 Cup flour
- 1 Quart half and half
- 1 1/2 Tsp salt
- Few grains pepper
- 2 Tbl Red wine vinegar

Step 1
Drain juice from clams and pour over vegetables in very smalll saucepan; add enough water to barely cover and simmer, covered over medium heat until
barely tender. (Don't over cook or veggies will become mushy).
In the meantime melt butter, add flour and blend; cook stirring constantly. Add cream, cook and stir with wire whip until smooth and thick (this is important so it doesn't become lumpy). Add undrained vegetables, clams and vinegar heat throughly.
