Pecan Chicken (Cooking light)

Ingredients

  • 4 chicken breasts
  • 1 cup whole buttermilk
  • 1 large egg
  • 2/3 cup flour
  • 1/2 cup finely ground pecans
  • Canola oil
  • salt and pepper

Preparation

Step 1

1. Preheat oven to 425. Place chicken in ziploc bag. Combine buttermilk and egg and add to bag.
2. Marinate 4 hours. Remove chicken and sprinkle with 1/2 tsp salt and 1/2 tsp pepper. Combine flour and pecans.
3. Dredge chicken in flour mixture; shake off excess. Heat large skillet over med-high heat. Add 2 Tbps canola oil and swirl to coat. Add chicken and saute for 4 min. or until browned. Turn over. Place skillet in oven bake at 425 for 10 minutes.
