Ingredients

    stick butter

  • 1

    cup firmly packed brown sugar

  • 1

    egg

  • 1

    teaspoon vanilla extract

  • 2

    cups all purpose flour

  • 1/3

    cup coco powder

  • 1

    teaspoon baking powder

  • 1

    teaspoon baking soda

  • 1/2

    teaspoon salt

  • 1

    cup buttermilk

Directions

Preheat oven to 350 Lightly spray Whoopie Pie Pan with non stick cooking spray In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy,about 3 minutes. Add egg and vanilla, beat until well combined. In another bowl,sift together dry ingredients. Add half into the butter mixture a=mix on low speed. When dry ingredients are almost incorporated, stop the mixer and add the buttermilk.Mix and add the rest of the dry ingredients. Mix until just combined. Spoon 2 tablespoons of batter into each cavity,spread batter to edges. Cavity should be just about 2/3 full. Bake for 8 to ten minutes or until the top springs back when touched. Allow cakes to cool in pan for 8 minutes. Take each pie and cover with filling and press together.
