Ingredients

  • 12 package of lentils (about 2 cups)
  • 8 cups of water
  • 4 beef bouillon cubes
  • 2 large potatoes
  • 1 chopped onion
  • 3 crushed garlic cloves
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of curry powder
  • freshly ground pepper
  • 1/2 lb (3-4) sliced carrots
  • 1 tablespoon of lemon juice

Preparation

Step 1

1. Wash and drain the lentils.
2. Bring the water to a boil in a large saucepan.
3. Add the bouillon and stir until dissolved.
4. Add the lentils and the cut potatoes, onions, garlic and seasonings.
5. Cover and bring to a boil.
6. Reduce the heat and boil gently for 30 minutes.
7. Add the carrots and lemon juice.
8. Continue simmering, covered, until the carrots are done (usually about another 15 to 20 minutes).
9. Adjust seasonings.
