Ingredients
- 2 cans (15 ounces) black eyed peas, drained and rinsed
- 2 cans (10 ounces) shoe peg corn, drained OR
- 2 1/2 cups corn cut fresh off of the cob
- 2 cans (15 ounces) black beans, drained and rinsed
- 1 cup red onion, finely diced
- 1 1/2 cups green pepper, finely diced
- 2 to 4 jalapeno peppers, seeded and finely chopped (optional)
- 4 tomatoes, seeded and diced
- 2 ripe avocados, diced (optional)
- 1 cup cilantro, chopped
- 1 bottle (12 ounces) Zesty Italian dressing

Step 1
Directions:
Mix all ingredients, except avocado, in a large bowl. Cover and refrigerate until ready to serve. Add avocados just before serving. Serve with tortilla chips or scoops.
