Sweet Potato Biscuits with Orange Honey Butter
- 2 1/2 cups all-purpose flour
- 1/4 cup firmly packed brown sugar
- 1 TBSP baking powder
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1 stick butter, softened
- 1 cup cooked mashed sweet potatoes
- 3 1/2 TBSP milk
- 1 cup (2 sticks) butter, softened
- 3 TBSP orange marmalade
- 3 TBSP honey
Preheat oven to 400. Lightly grease a baking sheet.
In a medium bowl, combine flour, brown sugar, baking powder, salt and cinnamon. Cut in butter with a pastry blender until mixture is crumbly. Add sweet potato and milk, stirring with a fork until dry ingredients are moistened. (Dough will be sticky).
