Ingredients
- 1 cup of quinoa ( preferably white quinoa according to Ariel - I sometimes mix the red and white varieties)
- 2 cups of water (to boil quinoa)
- 1 cup cherry or grape tomatoes - split in half
- 4 tablespoons capers
- 4 tablespoons chives
- 1 small bunch of scallions chopped including greens
- 2 tablespoons minced fresh Italian parsley
- 4 tablespoons white wine vinegar
- 2 tablespoons olive oil
- salt and pepper to taste

Preparation
Step 1
Boil quinoa about 20 minutes in water - until all water has evaporated. Cool quinoa.
Mix all ingredients with cooled grains.
