Ingredients
- 1 lb. pork tenderloin
- 1 tbsp each oil and butter
- 1 medium garlic clove, minced
- 1 tbsp tomato paste
- 1/2 cup dry red marsala
- 1/2 cup red wine
- 8 ounces fresh mushrooms caps
- 1 tsp chopped parsley
Preparation
Step 1
1. Cut tenderloin diagonally into cutlets.
2. Pound to 1/4 inch thickness.
3. Heat oil and butter in heavy fry pan.
4. Brown cutlets on both sides, remove from pan.
5. Add garlic to pan, sauté briefly.
6. Mix tomato paste with wines, and add to pan, with mushrooms.
7. Stir to blend with pan juices.
8. Simmer 3-5 minutes.
9. Return cutlets to pan and heat through.
10. Sprinkle with parsley and serve immediately.
