Ingredients
- 4 to 6 boneless, skinless chicken breasts
- 1 cup all purpose flour
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 large eggs
- 1 tbsp water
- 1 1/4 cup seasoned dry bread crumbs
- 1/2 cup freshly grated Parmesan
- unsalted butter
- olive oil
- salad greens
Preparation
Step 1
Pound chicken breast til 1/4 inch thick
Plate 1, combine flour, salt, and pepper
Plate 2, beat eggs with 1tbsp of butter
Plate 3, combine bread crumbs and Parmesan
Coat the chicken in each plate
Heat 1 tbsp of water and 1 tbsp of olive oil in a sauce pan and cook chicken on medium-low heat for 2-3 minutes on each side. Toss salad greens and place on top of chicken.
Salad dressing- Lemon Vinaigrette
2 squeezed lemons
1/2 cup olive oil
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
Whisk together
