Ingredients

  • 1-2 tbsp. flour
  • 1/8 tsp. pepper
  • 1 tbsp. olive oil
  • 1 lb. boneless, skinless chicken breasts
  • 1/3 cup low sodium chicken broth
  • 1 tbsp. fresh lemon juice
  • 4 thin lemon slices
  • 1 tbsp. chopped fresh parsley

Preparation

Step 1

Mix tog. flour & pepper. Pound chicken breasts to 1/4" thickness. Dredge cutlets in flour mixture. Heat oil in large skillet. Add cutlets & sauté until browned & cooked, approximately 3 min; remove to a dish & keep warm. Add broth, lemon juice & lemon slices to skillet; reduce heat & simmer 3 min. Add chicken. Sprinkle with parsley before serving,

Optional: Saute 1 chopped tomato with the chicken.
