Ingredients
- 2 (2 1b) pork tenderloins
- 1/4 cup balsamic vinegar
- 2 tbs honey
- 2 tbs Dijon mustard
- 2 tsp chopped fresh thyme
Preparation
Step 1
1. Preheat oven to 400°.
2. Coat a shallow roasting pan with cooking spray. Place the pork in the prepared pan and season the top and sides with salt and pepper.
3. In a small bowl, whisk together the vinegar, honey, mustard, and thyme. Spoon the mixture over the pork. Roast 45 minutes, basting every 15 minutes. Internal temperature should be 160, about 40 mins.
4. Let pork stand 10 minutes. Slice 1/3 of pork into 1 inch slices and serve for this meal.
