  • 8 oz. whole grain fettuccini pasta
  • 8 oz. sliced mushrooms
  • 3/4 cup frozen peas
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Cook 8 oz. fettuccini pasta according to pkg., directions. Add 8 oz. of sliced mushrooms & 3/4 frozen peas during the last 3-4 min. of cooking time. Drain pasta mixture, reserving 1/3 cup cooking liquid. Keep pasta warm. Whisk the reserved cooking liquid with 1/2 cup part-skim ricotta cheese in a saucepan; stir 1/4 cup parmesan cheese, 1/4 tsp. salt & 1/4 tsp. pepper.

Cook, stirring constantly, until hot. Fold in pasta mixture & 2 (5 0z.)cans solid white albacore tuna packed in water, drained. Sprinkle each serving with 2 tbsp. of parmesan cheese.
