Sausage and Grits Casserole

Ingredients
- 1 cup uncooked yellow grits
- 2 c. water
- 2 c. milk
- Salt
- 1 lb. sausage
- 1 onion, chopped
- 8 TBSP butter
- 2 eggs, beaten
- 2 cups sharp cheddar cheese, grated
- 10 dashes Texas Pete
- 1 tsp. paprika
- 1/4 c. chopped parsley

Preparation
Step 1
Preheat oven to 325.
Cook grits in 2 cups water and 2 cups milk, salted, until thick. Saute sausage and onion. Drain. Add butter, eggs, cheese and hot sauce to grits. Combine grits mixture with sausage mixture. Pour into a greased 13 x 9 inch casserole dish and garnish with additional cheese, paprika and parsley. Bake for 1 hour. Can be refrigerated up to 2 days before baking.
