Steak tips with Mushroom-Onion Gravy

Ingredients

  • 1 tbs soy sauce
  • 1 tsp sugar
  • 1 1/2 lbs sirloin steak tips (aka flap meat)trimmed of visible fat and cut into 1 1/2 inch chunks
  • Pepper
  • 4 tsp olive oil
  • 1 lb white mushrooms, sliced thin
  • 1 onion, halved and sliced thin
  • 1/4 oz dried porcini mushrooms, rinsed and minced
  • Salt
  • 1 garlic clove, minced
  • 1/2 tsp minced fresh thyme or 1/8 tsp dried thyme
  • 4 tsps flour
  • 1 3/4 cups beef broth
  • 1 tbs minced fresh parsley

Step 1

1. Combine the soy sauce and sugar in a medium bowl. Add the beef , toss to coat and marinate at least 30 minutes or up to 1 hour, tossing once
2.Season the meat with 1/8 tsp pepper. Heat 2 tsps of olive oil over medium high heat until just smoking. Carefully add the beef and cook until well browned on all sides ( 4-6 minutes), turning as needed. transfer beef to plate and set aside
3. Return skillet to a medium low heat and add the remaining 2 tsps of oil, mushrooms( white and porcini),onion, and 1/8 tsp salt. Cover and cook until the vegetables are softened ( 8-10 minutes). Uncover, increase heat to medium high and continue to cook, stirring occassionally, until the vegetables are well browned( 8-12minutes)longer. Stir in the garlic and thyme and cook til fragrant.Stir in the flour and cook for 1 minute. Stir in the broth, scraping up any browned bits, and bring to a simmer.
4. Return the beef, along with any accumulated juice, to the skillet. reduce the heat to medium low and simmer 3-5 minutes( meat registers at 130 degrees), stirring occasionally. Season with salt and pepper taste, sprinlkle with Parsley and serve with noodles
