Puffed Marshmallow Topped Sweet Potatoes

Ingredients

  • 3 cans (15 ounces each) Sweet potatoes drained can uses yams
  • 1/4 cup butter or margarine melted
  • 1/4 cup orange juice
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 24 large marshmallows

Step 1

Heat oven to 350. Pour sweet potatoes in a 1 1/2 quart baking dish coated with cooking spray. In a separate bowl combine margarine, juice, brown sugar salt and cinnamon. Mix well and pour over potatoes. Top with marshmallows. Bake 18 to 20 minutes or until hot and marshmallows are lightly brown. Makes 8 to 10 servings.
