Ingredients
- BEANS:
- 1 tsp. olive oil
- 8 - 10 ounces filet mignon, in two pieces
- 1 tbsp. butter
- juice of 1/2 lemon
- 2 tbsp. Olive oil
- 1 clove garlic, minced
- 1 sprig fresh rosemary
- grated zest of one lemon
- 1 can cannellini beans, rinsed and drained
Preparation
Step 1
* Place 2 tbsp. olive oil, garlic, rosemary and lemon zest in a small saucepan and warm until the garlic sizzles. Remove rosemary and discard.
* Add beans and mash until lumpy. Season to taste, stir well and keep warm while preparing the steak.
* Heat pan with a drizzle of olive oil over medium-high heat until hot. Fry steak for about 1 minute per side then place in pre-heated 350 oven for 6 minutes.
* Remove pan from oven and plate steaks to let rest. Add butter to frying pan and return to medium heat. Once butter is melted, add lemon juice and scrape up browned bits.
* Plate beans and drizzle with a bit of EVOO, some maldon salt and some hot pepper flakes for me and serve. Dan likes A1 on the side.
