Jamacan Jerk Chicken w/ Strawberry Mango Salsa

Ingredients

  • Chicken breasts:
  • 3 TBSP lime juice
  • 2 TBSP vegatable oil
  • 6-8 TBSP Jamacan Jerk seasoning
  • 4 boneless, skinless chicken breast halves (~2 lbs)
  • Strawberry Salsa:
  • 1 Mango, chopped
  • 1/2 cup chopped strawberries
  • 1 TBSP champagne vinegar
  • 1 tsp fresh (1/4 tsp dried) cilantro
  • Juice of 1 lime
  • 1 jalapeno, finely chopped*
  • Zest of 1/4 of an orange
  • 2 tsp agave
  • pinch of salt and pepper

Preparation

Step 1

Mix all ingredients together for the salsa and refridgerate for ~2 hrs.

Mix lime juice, oil, and jamacan jerk in a resealable plastic bag.

Add chicken; seal bag and turn to coat chicken. Refrigerate at least one hour or overnight, turning to coat chicken.

Grill chicken 15-20 minutes, turning frequently and brushing with marinade.

Spoon salsa over chicken and serve.
