Ingredients
- Chicken breasts:
- 3 TBSP lime juice
- 2 TBSP vegatable oil
- 6-8 TBSP Jamacan Jerk seasoning
- 4 boneless, skinless chicken breast halves (~2 lbs)
- Strawberry Salsa:
- 1 Mango, chopped
- 1/2 cup chopped strawberries
- 1 TBSP champagne vinegar
- 1 tsp fresh (1/4 tsp dried) cilantro
- Juice of 1 lime
- 1 jalapeno, finely chopped*
- Zest of 1/4 of an orange
- 2 tsp agave
- pinch of salt and pepper
Preparation
Step 1
Mix all ingredients together for the salsa and refridgerate for ~2 hrs.
Mix lime juice, oil, and jamacan jerk in a resealable plastic bag.
Add chicken; seal bag and turn to coat chicken. Refrigerate at least one hour or overnight, turning to coat chicken.
Grill chicken 15-20 minutes, turning frequently and brushing with marinade.
Spoon salsa over chicken and serve.
