Panchetta garlic sauce


sauce used for ravioli or any other pasta

  • EVOO
  • 1/2 cup diced pachetta
  • 3 cloves smashed garlic
  • 1 cup mushrooms
  • 1 1/2 chicken stock
  • salt & pepper
  • 4 TBS butter
  • 1/2 cup grated cheese
  • chopped fresh chives



Step 1

drizzle EVOO in deep pan and crisp panchetta

when almost brown add garlic. when garlic is light brown add mushrooms

cook mushrooms until they are soft and tender (5 mins.)

add salt & pepper

pour in chicken broth and cook until sauce is reduced by half.

add butter and cook until sauce thickens and looks velvety>

taste and add more salt as needed
