Ingredients

  • 7 oz. Almond Paste
  • 1 3/4 cup all-purpose flour
  • 1/2 cup sugar
  • 1 stick, cold butter, cut into small pieces
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • whites from 4 large eggs
  • 1/2 teaspoon vanilla
  • 1 cup sliced or slivered almonds

Step 1

Heat oven to 325@. Stack 2 baking sheet's on top of each other. Coat top sheet with nonstick spray.
Shred almond paste on large holes of a grater. Add next 5 ingredients to a food processor. Pluse until mixture resembles small crumbs.
Whisk egg whites and vanilla in a large bowl till frothy. Add flour mixture and almonds; beat with a large spoon until dough holds together.
Press on a lightly floured surface into a disk; cut in half.

Shape each half into a 10" long log. Flatten logs gently to 1/2-3/4" high. Using a pastry scraper or spatula, transfer to stacked baking sheet.
Bake 20-30 min. or until lightly golden and firm to touch. Place sheet's on a wire rack to cool. When biscotti is cool, cut diagonally with a serated knife into 3/4" slices. Lay slices flat onto baking sheet. Bake 30 minutes until toasted and golden, turn half way thru being careful not to brown. Cool completely. Makes 24
