Ingredients

  • Crust:

  • 1 1/2

    cups shortbread cookie crumbs

  • 5

    tablespoon's butter, melted

  • Filling:

  • 4- 8

    oz. pkg's cream cheese

  • 3

    cup's mashed banana's

  • 1

    cup sugar

  • 1/2

    cup banana liqueur

  • 2

    teaspoon's vanilla

  • 8

    eggs

  • Topping:

  • 1 1/2

    cups sour cream

  • 1

    tablespoon sugar

  • 1

    tablespoon banana liqueur

  • 1

    teaspoon vanilla

Directions

Position rack in lower third of oven and preheat to 350@. Spray a 10" spring-form pan. Cut circle of heavy duty foil, several inch's larger than pan, enough to cover pan bottom and up sides. Combine crumbs and butter, pressinto bottom and partically up sides of pan. Wrap outside of pan with the foil, trimmingtop edge. Set crust aside. Filling: Combiine cheese, banana's, sugar, liqueur and vanilla in a food processor, and mix till smooth. Add eggs, one at a time mixing well after each addition. Carefully spoon batter into crust. Place pan into a roasting pan. Add enough hot water to come up 1" up sides of pan. Bake cake until center is almost firm, 80-90 min. Remove from water bath and cool on rack. Combine topping ingred., spread over cake, cover and ref. overnight. Garnish in circles, starting at outer edge, with kiwi slices, then next circle, mandarin oranges, next, papaya, or mango, next fresh strawberries.
