KIELBASA WITH GOLDEN ONIONS AND APPLE

Ingredients
- 2 lbs smoked kielbasa cut crosswise into 3-inch lengths
- 2 tbsp olive oil
- 3 large onions, chopped (6 cups)
- 1/2 tsp salt
- 1 tsp black pepper
- 1/2 stick (1/4 cup) unsalted butter
- 1 large Granny Smith apple
- 1 3/4 cups chicken broth (14 ounces)
Preparation
Step 1
1. Lightly score each piece of sausage in several places with a sharp paring knife.
2. Heat 1 tbsp oil in 12-inch heavy skillet over moderate heat until hot but not smoking.
3. Brown sausage (in batches, replacing oil each time) turning occasionally until golden, about 4 minutes.
4. Wipe skillet clean and cook onions with salt and pepper in butter over moderate heat, stirring occcasionally, until golden brown, 15-20 minutes.
5. Meanwhile, peel, core and finely chop apple.
6. Stir apple and broth into onion mixture and simmer briskly, uncovered, stirring occasionaly until apple is tender, 6-7 minutes.
7. Add sausage and simmer, stirring, until heated through, about 1 minutes.
