Ingredients
- small piece of fat
- (approx. 1/8 lb. salt pork)
- 1 medium onion
- 2 cups diced potatoes or
- 1-1/2 cups potatoes and
- 1/2 cup diced carrots
- 1 cup water
- 1 lb. fish (cod or haddock)
- 1 pt. milk
- 1/8 tsp pepper
Preparation
Step 1
Cut salt pork in small cubes and fry until crisp. Remove the bits of meat, leaving the fat in pan. To the fat in pan, add the onion which had been thinly sliced and cook until slightly browned. Add the cubed vegetables and water. Boil 5 minutes. Cut fish in small cubes, removing all the bones and add to the mixture in the pan. Cook 15 minutes or until fish and vegetables are tender. Add the milk, which has been scalded. Season to taste with salt and pepper and serve piping hot with crackers or croutons.
