Ingredients
- 4 6pz skinless, boneless chciken cutlets or 2 packages thin sliced chicken cutlets
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- Pam
- 1/2 cup all purpose flour
- 3 tbsps butter
- 2 sage sprigs
- 1 tbsp minced shallots
- 1 tsp fresh thyme, chopped
- 2 tbsp lemon juice

Step 1
1. If using regular chicken cutlets- place between two pieces of plastic wrap; pound to 1/4 inch thickness. Sprinkle with salt and pepper.Heat a large skillet over medium high heat and coat with Pam.. Place flour in a shallow dish;dredge chicken in flour. Add chicken to pan;saute for 4 minutes on each side or until done.Remove chicken from pan
2. Add butter and sage sprigsto pan;cook over medium heat until butter browns. Discard sage. Add shallots and thyme;cook for 30 seconds.Add lemon juice;cook for 30 seconds. Remove from heat
3. Place chicken on a platter and drizzle sauce over chicken
