Smashed Potatoes

Ingredients

  • 1/2 - 1 bag fingerling potatoes
  • olive oil
  • salt and pepper

Preparation

Step 1

Boil potatoes for 15 minutes. Drain and cool with a towel over the top. Spray a baking sheet with Pam and place the potatoes on the sheet. Smash with the palm of your hand, then dribble with olive oil and sprinkle with salt and pepper. Bake at 400 oven for 30 - 45 minutes. Turn them over halfway through baking cycle. Bake till golden and crispy.
