Ingredients
- Tomato mixture:
- 2 cups cheddar cheese, shredded
- 1 cup monterey jack cheese, shredded
- 1/2 cup mayonnaise
- 1 (8 oz) can corn, whole kernal, drained
- 1 (4 oz) can green chili peppers, chopped and drained
- 2 tsp. chipotle chili peppers in adobo sauce finely chopped canned
- 1/4 tsp. garlic powder
- 1 medium tomato, chopped
- 1/4 cup scallions, sliced
- 2 Tbs. fresh cilantro, chopped

Step 1
Stir together cheeses, mayo, corn, chili peppers, chipotle chili peppers, and garlic powder in a large mixing bowl. Spread mixture into a quiche dish. Cover and chill up to 24 hours. To serve, bake cheese mixture in the dish in a 350 degree oven for about 25 minutes. Spoon tomato mixture in the center. Serve with tortilla chips
