Fresh parsley sprigs Place ham, fat side up, on a rack in a shallow roasting pan. Score fat on ham in a diamond design, and stud with cloves. Insert meat thermometer, making sure it does not touch fat or bone. Combine orange juice and next 3 ingredients. Brush ham with juice mixture. Bake, uncovered, at 325 degrees for 3 to 4 hours or until meat thermometer registers 160 degrees (18 to 20 minutes per pound). Baste ham with juice mixture every 30 minutes. Garnish with peach halves and fresh sprigs of parsley. Serves 20.
