Dijon Mustard Sauce

Sauté an onion; add white wine...reduce, stir in crème fraîche or sour cream and strong (nose tingling) Dijon mustard...simmer. what have you got? Why French mustard sauce.

Ingredients
- 1/2 cup finely chopped yellow onion, or one small
- 1 teaspoon olive oil, any type
- 1/3 cup or 75 ml dry white wine
- 1/3 cup strong French Dijon mustard, or 4 tablespoons
- 1 cup or 250 ml sour cream, or
- salt and pepper to taste

Step 1
In saucepan, heat olive oil on medium heat; add onion and sauté until translucent (approx. 5 min), stirring frequently to avoid sticking or burning. Add wine and simmer until liquid is reduced by half; add mustard and cook for several minutes. Add sour cream and salt, pepper and simmer, at bubbling rate for 5 minutes before reducing heat to low/warm for 15-20. Pour over chicken and serve.
