Ingredients
- 1/2 lb Bacon
- 1/2 Red Onion, sliced
- 3 TBS sugar
- 2 TBS Vinegar
- Chopped Hard Boiled Egg
- Baby Spinach, fresh

Preparation
Step 1
Cut up, and cook the bacon until crisp, remove. Save about 4 TBS bacon fat.
Add the onion to the bacon fat, cook for a couple of minutes. Add the sugar and vinegar. Add more vinegar if needed.
Pour over spinach, sprinkle bacon and egg, and toss.
