Ingredients
- 10 lbs. beef stew meat
- 5 Tbs. vegetable oil
- 2 Tbs. salt
- 3 tsp. pepper
- 2 Tbs. thyme
- 2 C. flour
- 1/2 C. vegetable oil
- 8 C. diced onion
- 24 C. beef broth
- 2 lb. peeled sliced carrots
- 2 lb. peeled diced potatoes
Preparation
Step 1
Toss raw beef cubes with oil, seasonings and flour. Spread on sheet pan and bake in 450* convection oven 20 minutes till browned.
In large soup kettle, heat oil and sauté onions till soft.
Add beef and stir to combine oil, flour and onions.
Stir in beef broth and bring to boil. Simmer for 1 hour. Add potatoes and carrots. Simmer 20 minutes longer.
