Double Lemon Cake Roll

Ingredients

  • Filling:
  • 4 egg
  • 3/4 cup sugar
  • 1/4 cup water
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 2/3 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 8 oz. cream cheese, softened
  • 1 cup powdered sugar
  • 1 tbs. lemon juice
  • 2 tsp. grated lemon peel

Preparation

Step 1

To make cake:
Place egg and whip about 3 minutes, or until very thick and lemon colored. Gradually add sugar, beating about 1 minutes. Scrape bowl.

Add water, vanilla, and lemon extract. Decrease speed and slowly add flour, baking powder, and salt. Beat until combined.

Line a 15.5 x 10.5 x 1 inch pan with waxed paper. Pour batter into pan, spreading corners. Bake at 375 degrees for 11 - 13 minutes. Remove from oven and immediately turn onto a towel sprinkled with powdered sugar. Remove paper and roll cake and towel together. Cool completely.

For lemon filing, place ingredients in a bowl and mix. Spread onto cooled cake.
