Fruit Soup

Ingredients

  • 1/2-3/4 cup minute tapioca
  • 4 cups assorted dried fruit-prunes, peaches, apricots, apples, pears
  • 1/2 cup raisins
  • 1 1/2 cups sugar
  • 2 cinnamon sticks
  • dash of salt
  • juice of 1 lemon
  • 1 can dark pitted cherries, drained and save juice
  • 2 cups grape juice
  • 1/2 cup red wine (juice from cherries or additional 1/2 cup grape juice can be added instead of wine)

Preparation

Step 1

Soak dried fruit in 3 quarts water overnight. Add tapioca to fruit and mix together. Add sugar, cinnamon, and salt. Simmer 1/2 hour and let cool. Add lemon juice, cherries, grape juice and wine.
Serve with Vanilla sauce.
