- 1 1/2 lb Roma tomatoes, diced (about 6-8 tomatoes)
- 1/2 of a red jalapeno pepper, seeded and minced
- 3 tbs raw honey
- 1 tbs of cider vinegar
- 1/4 tsp ground black pepper
- 1/4 tsp of ground mustard
- 1/4 onion powder
- 1/4 tsp allspice
- 1/4 ground cumin
- 1/4 tsp of cayenne pepper, optional

Combine all ingredients in a medium saucepan
Bring to a boil over medium heat, stirring often
Reduce heat and allow to simmer about 1 hour
