Gingered Pear Upside-Down Cake

Ingredients

  • Topping:
  • 1/2 cup packed brown sugar
  • 1/4 cup butter or margarine
  • 1 tbs. light corn syrup
  • 1 tbs. finely chopped crystallized ginger
  • 1 large ripe pear
  • Cake:
  • 1 cup sugar
  • 1/2 cup shortening
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 cup milk
  • 1 tbs. finely chopped crystallize ginger
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt

Preparation

Step 1

To make topping combine the brown sugar, butter, and corn syrup in small saucepan. Cook and stir over medium low heat for 3 - 5 minutes or until smooth. Pour into a 9 inch round pan that has been sprayed with non-stick cooking spray. Sprinkle with chopped ginger. Set aside.

To make cake, place sugar, shortening, and vanilla in a bowl. Beat until combined (about 45 seconds). Add eggs,and mix until combined. Scrape bowl and add the remaining ingredients. Beat about 1 minuted until well combined.

Peel, core, and slice the pear. Arrange pear slices evenly over sugar mixture in pan. Spread batter evenly over the pear slices. Bake at 350 degrees for 45 - 55 minutes. Let stand in pan for 3 minutes and invert on serving plate.
