Ingredients

  • 2 cups all-purpose flour
  • 2 1/2 cups cooking oats (not instant), finely ground
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 oz Hershey bar, grated - I coarsely chopped it
  • 12 oz (or 2 cups) semi-sweet chocolate chips
  • 1 cup chopped nuts, optional

PREPARATION

- Soften butter by letting it stand for 30-45 minutes at room temperature OR cut into chunks and allow to stand for 15 minutes at room temperature.

- Measure 2 1/2 cups uncooked oats, then process in a blender or food processor until finely ground.

- Grate Hershey bar.

DIRECTIONS

1. Preheat oven to 375 degrees.

2. In a mixing bowl, sift together the flour, oatmeal, baking powder, baking soda and salt.

3. Cream the butter with the sugars until fluffy using an electric mixer on medium speed. Add in the eggs and vanilla extract. Add the dry ingredients. Stir in the Hershey bar and chocolate chips. Add nuts, if desired.

4. Drop large spoonfuls onto ungreased cookie sheets and flatten. Bake for 8-10 minutes or until golden brown on bottom. (I baked mine a little longer). Cool slightly before transferring to wire racks to cool completely. TIP: Remove from oven while they still look undercooked; they will firm up as they cool.
