ORANGE MELTAWAYS

Ingredients

  • 3/4 cup butter or margarine softened
  • 1/2 cup sifted powdered sugar
  • 1 tablespoons plus 1 teaspoon grated orange rind
  • 1 teaspoons vanilla extract
  • 1 cup all purpose flour
  • 1/2 cup cornstarch
  • 2 tablespoons sugar

Preparation

Step 1

Cream butter, gradually add powdered sugar, beating until light and fluffy. Stir in orange rind and vanilla. Combine flour and cornstarch, add to creamed mixture, stirring well. Cover and chill 1 hour. Divide dough in half, shape each half into a roll 5" long. Wrap in waxed paper, and then in aluminum foil, freeze 24 hours. Roll dough in 2 tablespoons sugar. Cut dough into 1/4" slices, place 1" apart on ungreased cookie sheets. Bake at 375 degrees for 8-10 minutes. Cool on wire racks. Makes 3 dozen.
